Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup milk
- 1/4 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- Oil for frying vegetable or canola oil
- Powdered sugar for dusting
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with liners
In a mixing bowl, whisk together flour, sugar, baking powder, and salt
In another bowl, combine milk, buttermilk, melted butter, vanilla extract, and egg
Mix well
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix
Fill each cupcake liner about 2/3 full with the batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
While the cupcakes are baking, heat the oil in a deep pan or fryer to 350F 175C
Once the cupcakes are done, remove them from the oven and let them cool for a few minutes
Take each cupcake, dip it in the hot oil, and fry for about 20-30 seconds on each side or until they turn golden brown and crispy
Use a slotted spoon to remove them from the oil and drain on paper towels
Dust the funnel cake cupcakes with powdered sugar before serving
