Creamy Lemon Chicken with Spinach and Artichokes



The flavors in this Creamy Lemon Chicken with Spinach and Artichokes go so well together. The soft chicken, spinach, and artichokes go well with the creamy lemon sauce, making a dish that is both comforting and classy.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 cup chopped spinach
  • 1 cup quartered artichoke hearts
  • 2 tablespoons chopped fresh parsley

Instructions:

Season chicken breasts with salt and pepper

In a large skillet, heat olive oil over medium-high heat

Add chicken breasts and cook until golden brown and cooked through, about 6-7 minutes per side

Remove from skillet and set aside

In the same skillet, add minced garlic and cook for about 1 minute until fragrant

Pour in chicken broth and scrape up any browned bits from the bottom of the skillet

Bring to a simmer and cook for 2-3 minutes

Stir in heavy cream, Parmesan cheese, lemon juice, and lemon zest

Cook until the sauce has thickened slightly, about 3-4 minutes

Add chopped spinach and artichoke hearts to the skillet

Cook for an additional 2-3 minutes until spinach is wilted and artichokes are heated through

Return chicken breasts to the skillet and spoon some sauce over the top

Let simmer for 2-3 minutes to heat the chicken through

Garnish with chopped parsley before serving
