A healthy and comforting vegan dhal made with butternut squash and red lentils, spiced with fragrant herbs.
Ingredients:
- 1 cup red lentils
- 2 cups diced butternut squash
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 4 cups vegetable broth
- 1 tablespoon coconut oil
- Salt to taste
- Cilantro for garnish
Instructions:
Put coconut oil in a big pot and heat it over medium-low heat
Toast the cumin seeds for about one minute, until they smell good
Chop up the ginger, onion, and garlic and add them
Cook the onion until it turns clear
Pepper, coriander, and chili powder should be mixed in
Keep cooking for one more minute
Put in vegetable broth, diced butternut squash, and red lentils
Bring up the temperature
Turn down the heat, cover, and let it cook for 20 to 25 minutes, until the squash and lentils are soft
Add salt to your liking
Add fresh cilantro as a garnish before serving
Hot rice or naan bread should go with it
