Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup applesauce
- 1/2 cup grated apples
- 1/4 cup sour cream
- For Salted Caramel Frosting:
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup whole milk
- 1/2 tsp salt
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions:
Preheat your French Press to 350F 175C
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs, one at a time, beating well with each addition
Stir in the vanilla extract
Mix in the grated apples and applesauce until well combined
Gradually add the dry ingredients to the wet mixture, alternating with sour cream, beginning and ending with the dry ingredients
Mix until just combined
Line a cupcake pan with cupcake liners and fill each liner 2/3 full with the cupcake batter
Bake in the preheated French Press for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
While the cupcakes are cooling, prepare the Salted Caramel Frosting
In a saucepan over medium heat, melt the 1/2 cup of butter
Stir in the brown sugar and cook for 2 minutes, until the sugar has dissolved
Stir in the milk and salt, and bring the mixture to a boil
Remove from heat and let it cool slightly
Gradually whisk in the powdered sugar and vanilla extract until the frosting is smooth and creamy
Once the cupcakes are completely cooled, frost them with the Salted Caramel Frosting
