These Mole Tacos are a delicious fusion of Mexican flavors, with tender chicken simmered in rich mole sauce, topped with the freshness of cilantro and the creaminess of queso fresco. Perfect for a flavorful and satisfying meal!

Ingredients:

  • 1 lb boneless chicken thighs, cut into small pieces
  • 1 cup mole sauce
  • 8 small corn tortillas
  • 1/2 cup crumbled queso fresco
  • 1/4 cup fresh cilantro leaves
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions:

Heat vegetable oil in a skillet over medium-high heat

Add the chopped onion and minced garlic, saut until fragrant and translucent

Add the chicken pieces and cook until they are browned and cooked through

Pour in the mole sauce and simmer for 5-7 minutes, stirring occasionally, until the sauce thickens and coats the chicken

While the chicken is simmering, warm the corn tortillas in a dry skillet or microwave until they are pliable

To assemble the tacos, spoon a generous amount of the mole chicken onto each tortilla

Sprinkle with crumbled queso fresco and fresh cilantro leaves

Season with salt and pepper to taste

Marcela's Spicy Oregano Burgers



Marcela's Spicy Oregano Burgers are a flavor-packed twist on classic burgers. The combination of fresh oregano, red pepper flakes, and a zesty mayo sauce adds a delightful kick to your burger experience. Perfect for a summer cookout or any time you're craving a tasty burger with a spicy twist!

Ingredients:

  • 1 1/2 pounds ground beef
  • 1/2 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 2 tablespoons fresh oregano leaves, chopped
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 hamburger buns
  • 4 slices pepper jack cheese
  • 4 lettuce leaves
  • 4 tomato slices
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 tablespoon ketchup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey

Instructions:

In a large bowl, combine ground beef, chopped red onion, minced garlic, chopped oregano leaves, red pepper flakes, salt, and black pepper

Mix well

Divide the mixture into 4 equal portions and shape them into burger patties

Preheat your grill to medium-high heat and oil the grates to prevent sticking

Grill the burger patties for about 4-5 minutes per side, or until they reach your desired level of doneness

During the last minute of grilling, place a slice of pepper jack cheese on each patty and close the grill to melt the cheese

While the burgers are grilling, prepare the spicy mayo sauce

In a small bowl, mix together mayonnaise, sriracha sauce, ketchup, Dijon mustard, and honey

Stir until well combined

Once the burgers are done, remove them from the grill

To assemble the burgers, spread a generous amount of the spicy mayo sauce on the bottom half of each hamburger bun

Place a lettuce leaf and a tomato slice on top of the sauce

Add the cheesy burger patty on top of the veggies

Complete the burger with the top half of the bun

Fennel Sausage and Ricotta Pizza - Dishing Up the Dirt



The savory fennel sausage, creamy ricotta cheese, and tasty toppings on this Fennel Sausage and Ricotta Pizza make your mouth water. You can have a cozy night in or a fun dinner with friends.

Ingredients:

  • 1 pizza dough store-bought or homemade
  • 1/2 cup tomato sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/2 pound fennel sausage, crumbled and cooked
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes optional
  • Fresh basil leaves, for garnish
  • Olive oil, for drizzling
  • Salt and black pepper, to taste

Instructions:

Preheat your oven to 475F 245C and place a pizza stone or baking sheet in the oven to heat up

Roll out the pizza dough on a floured surface to your desired thickness

Transfer the rolled-out dough to a piece of parchment paper for easy transfer to the hot oven surface

Spread the tomato sauce evenly over the pizza dough, leaving a small border for the crust

Sprinkle the shredded mozzarella cheese evenly over the sauce

Distribute the cooked fennel sausage, sliced red onion, minced garlic, and red pepper flakes if using evenly over the pizza

Dollop spoonfuls of ricotta cheese over the top of the pizza

Carefully slide the parchment paper with the assembled pizza onto the hot pizza stone or baking sheet in the oven

Bake for 10-12 minutes or until the crust is golden and the cheese is bubbly and slightly browned

Remove the pizza from the oven and let it cool slightly before garnishing with fresh basil leaves

Drizzle a little olive oil over the top and season with salt and black pepper to taste

Pumpkin Caramel Rice Krispy Treats



These Pumpkin Caramel Rice Krispy Treats are a delightful twist on the classic recipe, combining the flavors of pumpkin and caramel for a delicious fall treat.

Ingredients:

  • 6 cups Rice Krispies cereal
  • 1/2 cup pumpkin puree
  • 1/2 cup caramel sauce
  • 1/4 cup unsalted butter
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 package 10 oz marshmallows

Instructions:

Heat a large saucepan over low heat to melt the butter

When the marshmallows are fully melted, add them and stir

Pureed pumpkin, caramel sauce, pumpkin pie spice, vanilla extract, and salt should all be thoroughly mixed in

After turning off the heat, carefully fold in the Rice Krispies cereal until it is well coated

Grease a 9 x 13-inch baking dish and press the mixture into it

Allow to cool fully before slicing into squares

Wonton Noodle Soup



Asian-style soup with a hearty broth, savory pork-filled wontons, and egg noodles is called wonton noodle soup. It's ideal for gaining warmth on a cool day.

Ingredients:

  • 12 wonton wrappers
  • 1/2 pound ground pork
  • 2 cloves garlic, minced
  • 1/2 teaspoon ginger, minced
  • 1 green onion, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 4 cups chicken broth
  • 4 cups water
  • 8 oz egg noodles
  • 1 cup baby bok choy, chopped
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced bamboo shoots
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions:

Ground pork, chopped green onion, minced garlic, minced ginger, soy sauce, sesame oil, and white pepper should all be combined in a mixing bowl

Blend thoroughly

Settle a tiny dollop of the pork mixture into the middle of every wonton skin

The wrapper should be folded in half diagonally to create a triangle

Wet the edges and press firmly to seal them

Continue with every wonton

Bring the water and chicken broth to a boil in a big pot

When boiling, mix in the baby bok choy, bamboo shoots, and sliced mushrooms

Simmer for five minutes

When the wontons float to the top, add them to the simmering broth and cook for an additional four to five minutes

Cook the egg noodles in a different pot as directed on the package

After draining, set aside

Spoon cooked noodles into individual serving bowls

Over the noodles, ladle the hot soup with the wontons and veggies

Add salt to taste and add fresh cilantro as a garnish

Enjoy while hot!

Garlic Butter Shrimp



This recipe for garlic butter shrimp is quick and easy, but it tastes great. Great for dinner during the week or having people over.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

Melt the butter in a big pan over medium-low heat

Put garlic minced and olive oil in the pan

For about one to two minutes, cook until the garlic smells good

Season the shrimp with salt and pepper after adding them to the pan

About two to three minutes on each side, cook until the shrimp turn pink and opaque

Add chopped parsley as a garnish before serving


Funnel Cake Cupcakes



These Funnel Cake Cupcakes are a fun take on the classic treat you'd get at a fair. They have the light, fluffy texture of cupcakes and the crunchy, sweet goodness of funnel cakes. Just what you need to satisfy your sweet tooth!

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • Oil for frying vegetable or canola oil
  • Powdered sugar for dusting

Instructions:

Preheat your oven to 350F 175C and line a cupcake tin with liners

In a mixing bowl, whisk together flour, sugar, baking powder, and salt

In another bowl, combine milk, buttermilk, melted butter, vanilla extract, and egg

Mix well

Pour the wet ingredients into the dry ingredients and stir until just combined

Do not overmix

Fill each cupcake liner about 2/3 full with the batter

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

While the cupcakes are baking, heat the oil in a deep pan or fryer to 350F 175C

Once the cupcakes are done, remove them from the oven and let them cool for a few minutes

Take each cupcake, dip it in the hot oil, and fry for about 20-30 seconds on each side or until they turn golden brown and crispy

Use a slotted spoon to remove them from the oil and drain on paper towels

Dust the funnel cake cupcakes with powdered sugar before serving
